Wine made with grapes from century-old Verdejo grape vineyards, acquired to local grape growers owning 100-120 years old vineyards, very close to us. There is a selected harvest, hand-made and in 15 kg cases. A very soft pressing is then made. From the same grapes of Iduna, the 1st fermentation is performed partially in tank and partially in oak barrels. The second fermentation will happen in the bottle by the traditional method where it will remain with its lees for at least 36 months to develop the characteristics of this century-old Verdejo vineyards from one of the most authentic terroir in the world. Subsequently the disgorgement and labelling is fully hand-made.
